What's For Dinner?
Another very busy day and so far I still am not sure what we're going to have for dinner! Usually I plan ahead, but it's just been one of those non-stop sort of days.
What are you having?
Update: 7:00 pm: I ended up throwing together an Apple Blue Cheese Salad With Walnuts.

I found some enchiladas in the freezer this afternoon (from a batch I made in December) so I think we're going to have those with some refried beans, chips and salsa, sour cream (of course!) and a little salad. (we would have guacamole, but Nelson ate the last avocado for lunch!) I love it when bits and pieces of stuff you need to eat end up sounding like a meal! :)
But, if we're going to have that for dinner, Nelson and I need to stop eating cashews! I think he would eat his weight in them if I let him.

Alexis would too. Nuts of any sort for that matter. She loves her nuts and seeds! :o)
