What's For Dinner?
We have an appointment this evening so I'm making something simple: Baked Rosemary Chicken with Roasted Potatoes and Carrots.

I had some chicken I needed to use, so I made my "chicken and farfalle pasta with parmesan cream sauce" which one of my Italian friends told me was actually carbonara without the pancetta. Who'd have thought I'd come up with something out of desperation to make dinner one night and it'd turn out to actually BE something? I used to make it with grated parmesan from a can, garlic powder and canned mushrooms. I've graduated to making it with fresh mushrooms sautéed in garlic and freshly grated parmesan cheese, but I still use frozen peas in it. Yummy! :)
