It was a bit cold last night and I got a massive traffic jam on the way home - my husband bought some delicious Italian bread and I made a vegetable soup (for him, with beef) and served it sprinkled with grated parmesan. I made it in a heart beat and it was a delicious choice for a Monday!

I LOVE soup! I eat it year round, though I know of those that only eat it when it's cold. (I have a friend that refuses to eat soup unless it's below freezing outside!)
