What's For Dinner?
I've gotten several e-mails and a comment asking to bring back the "What's for Dinner" segment, so ask and you will receive!
Most days I'll post an entry and tell you what I'm making for dinner, or thinking of making, or even ask for suggestions if I'm totally drawing a blank. I'm interested in what you're having for dinner too, so please comment and let me know! It's a fun way to brain storm and it also makes meal planning more fun! And who knows? What you're having might sound better to me than what I have in my head! ;o)
So without further ado here we go:
Tonight I'm making stuffed mushrooms, roasted asparagus and a spinach salad with balsamic vinaigrette.

We do this on a forum I frequent, and it's such a great way to get new idea for dinners!
Tonight I'm making vegetarian tamale pie, and probably a simple green salad and some fruit.

I'm making Baja Fish Tacos - YUM!
Grilled tilapia seasoned with Tony Chachere's, topped with pico de gallo, lettuce and Creamy Jalapeno sauce
One of my absolute favorite meals!

How fun! Great way to get new ideas when I'm in a rut making the same things over and over! Tonight I made Chicken Alfredo Penne Bake and served a salad and garlic bread with it.

small group tonight and it wasn't my turn to cook -- but we had pork stew with homemade bread and grilled corn!

Thank you for bringing this fun segment back! I had a Greek salad with extra feta topped with a grilled salmon filet. My husband had leftover spicy Chinese chicken and rice that I made last night because he can't stand salmon.

Oh homemade bread!
I love salmon. I've never had it with feta though. That sounds great!
