What's For Dinner?
Tonight we're going to do light and simple for dinner and Alexis and I will have a spinach salad. I'm not sure what Jamison will have, most likely a sandwich.

I wanted to have leftovers from last night because I cooked 6 nights in a row. I was thinking reheating the prime rib and making sandwiches out of them, but my husband is adamant that he won't eat the same thing for dinner two nights in a row. I'm thinking I'm still going to have a sandwich and he can bake a frozen pizza!

I went a little crazy today and I'm making a lot of things I've never made before...
- Brisket (I've never made one - I'm doing it in the oven though, not in a smoker)
- Creamy Cilantro Potato Salad - I'm in love with cilantro, so this is a way to incorporate it into a perfect side dish for BBQ
- Squash/Zucchini sauté
- Homemade Whole Wheat Bread - First time I've ever attempted it and it's WONDERFUL!! I'll definitely be doing this again!
- Brownies - recipe from Bake or Break
I'm the only one at my house this weekend, but I just invited my neighbors over, so I'll be enjoying it with them in a few hours. Pictures of everything will be on the blog later...

We are having steak au poivre, spinach pie, horseradish mashed potatoes and leftover cauliflower au gratin. Sadly, I didn't make dessert!!
Would love to know how you do your spinach salad - we love spinach in our house - would you share your recipe?

Wow! You guys sound like your meals are delicious!
I usually use spinach as the base for most of my impromptu salads. I do my spinach salad, much like a cobb or diner salad. I use spinach as the base and then top it with carrots, tomatoes, mushrooms, cucumbers, boiled egg, sometimes I add some chicken, but most likely I don't. Possibly some chopped bacon and sunflower seeds, but not always and I usually serve it with a little cottage cheese and normally some homemade thousand island dressing. It's not fancy, but it's good.
