Tonight Jamison has class, so it's just Alexis and me for dinner. We are having ahi tuna steaks, local corn on the cob and cucumbers.

Tonight I'm making chicken, extra cheese, and avocado enchiladas. The avocado bakes beautifully inside the enchilada. I learned that idea from my favorite Mexican restaurant. I'll serve these with pinto beans, sour cream, and extra avocado slices for me.
