What's For Dinner?

I've got some steak strips marinating in the fridge so we'll have steak tips, plain for Jamison and Alexis, and with mushrooms and onions for me, over rice. I'm also going to do some sort of spinach side dish for Lex and I, but I don't know what as of yet.

We are having cheese and potatoe soup, with a mixed greens salad and artisan bread. I'm hoping it rains so I don't have to try and make this after practice (8pm). :-{

We are having tuna steaks and cat fish. For a side dish we are having steamed green beans and some whole grain bread!

I browned some dark chicken in olive oil/butter with salt, pepper, and fresh rosemary and they tasted fantastic. I grilled some asparagus and cherry tomatoes and reheated 2 ears of your roasted thyme corn that we adore!

Esther, I love tuna and catfish...Sounds great!

Noelle, sounds really good. I haven't made the thyme corn in a while. I may pick up some end of the season corn this weekend and make some!

Karen, I'm a big fan of Mexican, no matter how simple!
