Jamison is in class tonight. Alexis wants left over chicken noodle soup. I think I may have a chili dog and of course apple pie for dessert while watching election returns since it's election day and all! ;oP

Roasted chicken and I don't know what else or what to do with the chicken. Well, at least the chicken is cooked! Big TV night, for sure.

Roasted chicken sounds fabulous! I made one this weekend. I'm anxiously awaiting election results now and quite frankly I'm a little sick of all the pundit chatter right now, but I guess that's how it goes! Hopefully we'll know tonight who the winner is...This drawn out stuff of the last 2 elections was for the birds!

I stuffed two chicken breasts with feta cheese, red bell pepper, and some dry seasonings. I am a little worried because every time I stuff pork chops (corn bread stuffing) or chicken, it is a 50/50 chance whether I cooked it enough without drying it out or we cut into it and it's pink/raw and a mess... Wish me luck!
