I keep saying I'm going to try my hand at making my own marshmallows but have yet to make 'em. I've read many recipes and actually have a cookbook on marshamllows but keep putting it off. Is it really not that difficult?

Of the ones listed above the regular marshmallows and the chocolate ones are the easiest...No eggs! The pumpkin marshmallows were interesting. The flavor was good, but they were a bit eggy in texture. They were from when I was still doing Tuesdays with Dorie. I want to make a version not using eggs, but I haven't had time to try it yet. The non egg versions are extremely easy! If you try one let me know how they turn out! :o)
