What's For Dinner?

I'm drawing a blank today. One minute I think I have a good idea and then the next it just doesn't sound that great to me!

Inspire me...What are you having?

Update: 2/19: 10:55 AM: I ended up taking the left over chicken from Tuesday night and making chicken soup. It was a snowy, foggy day and soup seemed like the perfect choice!

Not time for dinner yet. I use a pressure cooker so I don't have to decide until late in the afternoon. So far, I think that it will be Potato and Chickpea Curry, Brown Basmati Rice and an Indian inspired kale or other greens side dish. I am getting hungry again.
It's either that or Mediterranean White Bean Stew. So many choices...

Ooh,I have two suggestions for you. These are my new favorite chicken dishes I just recently made. One is Apricot-mustard-glazed-chicken-breasts and you can see the recipe here:

I don't know either! I was defrosting a chicken, but it's still frozen.

Allie, isn't it amazing how long it takes to thaw a chicken?? It seems like I'm always waiting on something like that!
