It's class night again for Jamison. I'm not sure what he'll have for dinner yet. Alexis is having left over turkey and peas from this weekend and I'm making a roasted root vegetable soup for me. Alexis usually isn't interested in those types of soup, but I'm going to get her to try it none the less.

Steak, marinated overnight. Potatoes, lubed with olive oil and roasted. Salad with an orange honey vinaigrette. THOUGH it will be a late one because I drive soccer carpool first!

Oooh! I love roasted root veggies in soup. Yum!

I think we're going to have chicken soup that I froze a few weeks ago (now that we have a microwave again). Or eggs. Easy easy easy food for now.

I am going to make a cold tortellini salad with lots of chopped veggies. I will serve it over a bed of spinach!! Gotta use up those veggies:)
