Avocado Egg Salad

I love avocados and I love egg salad. One day I thought I would spruce up my basic egg salad and decided I'd add cucumber and most importantly avocado. What resulted was this amazing salad that really hits the spot.

You can serve this by itself on a bed of lettuce or inside a quartered tomato. It also makes really fabulous sandwiches alone, or again topped with tomato and lettuce. This is an eat it when you make it sort of salad, as avocados tend to brown when exposed to air for too long. Left overs will definitely not look very appetizing so keep that in mind.

Let's make some Avocado Egg Salad!

What You'll Need:
2 large ripe avocados, cut into chunks
1 English cucumber, cut into cubes
4 boiled eggs
2 large stalks of celery, chopped
1/2 teaspoon of celery salt
Freshly ground black pepper
1/4-1/3 cup of mayo (more if you like, less if you don't)

This really is the simplest salad ever. Dump in all your ingredients and stir until mixed. Taste and adjust seasoning if needed.

Really it's that easy and it's fabulous too!

Notes: You could also add in a teaspoon of celery seed if you liked.
