Update: 5:27 PM: We had an early dinner. We had some left over roast beef from this weekend so I made a roast beef sandwich and had some apple. Alexis wanted cherries, apple and mozzarella. Simple, quick and tasty...Not bad at all! ;o)

What's For Dinner?: Labor Day Edition!

This afternoon some friends of ours we haven't seen for a long time are coming over and bringing their son. We plan on relaxing, chatting and letting the kids play. We decided to make a couple of pizzas for dinner: A gluten free meat pizza and a regular veggie pizza. I've got everything shredded/chopped/ready to go in the fridge so when the time comes I'll put the pizzas together. We'll also have a tossed salad and homeade blue cheese or ranch dressing to choose from.

I had planned to make Dorie's Ice Cream Torte yesterday, but I ran out of time. I'm baking a basic chocolate cake (cooling now) and plan to frost it with Caramel Frosting. I made Jamison a gluten free chocolate cake and will frost it the same way.

Tonight Jamison has class so Alexis has asked for Chicken Noodle Soup and I must say it's a fabulous choice for this dark, rainy day! Though I must admit I'm enjoying the weather too...We really needed some rain!

Oh and just so you know until early December Jamison will be in class on Tuesday and Thursday nights and you most likely will not see rice or potatoes on the menu (unless they are creative) on those nights until then! ;oP

Update: 10:51PM: When I was slicing cucumbers and tomatoes for Alexis to go with her chicken they looked so good to me that I decided to make a salad instead of Sloppy Joes. It was fabulous!

Tonight we're having guests over for dinner. That's always fun! We're having fajitas (pan made this time I decided it was too hot outside so I pulled out the crock pot instead!), "Refried" Beans, queso, tortilla chips, Fresh "Salsa" and roasted peppers and onions to go on the fajitas. We'll also have cheese and sour cream for topping if desired.

For dessert we're having a peanut butter cheesecake with a chocolate crust (I made Jamison a gluten free version with no crust), topped with hot fudge and freshly whipped cream.

To drink I took some of the concentrate from the Strawberry Lemonade Punch in the freezer and simply made Strawberry Lemonade instead. I also made some Passion Fruit iced tea. I'll have sugar or a zero calorie sweetener for the tea if needed, but I think it's best just straight up and of course we'll have water if either of the above choices don't suit.

Update: 3:17 PM: I forgot about the Mexican rice! We're having that too! :o)

Do ever just have one of those days that you're just exhausted before you ever get started? I didn't sleep well last night and subsequently I'm just foggy today. So what does that have to do with dinner? I'm glad you asked! ;oP

Tonight I think a little comfort food is in order, and also food that I don't have to give too much thought to either since my brain is a little foggy! So this morning before Alexis and I headed upstairs to her school room to do lessons I put a roast in the slow cooker. With the roast I'll whip up some mashed potatoes...Plain for Jamison and goat cheese for me. We also have some left over corn from last night for Alexis and me and possibly some sliced cucumbers and/or tomatoes.

The first day of Kindergarten went well! We had a blip here or there, but otherwise it went entirely smoothly and Alexis had fun, so that is all that matters! Now let's talk dinner!

Tonight we're having pork chops, fresh tomatoes and Parmesan and garlic roasted potatoes. For dessert, which we don't normally do that often, but hey it's a special day...Alexis and I will have peach cobbler and for Jamison I will figure out something gluten-free, but I'm not sure what it will be yet.

Update: 7:03PM: I ended up making Jamison some gluten free chocolate pudding. Alexis ended up wanting pudding instead cobbler.

Tonight we're having herb roasted chicken (I like the use the leftovers for other things and I need to make some broth!) and baked potatoes. Alexis and I will also be having some local corn on the cob and some "sushi" pickles.

Update: 4:09 PM: When we got back from Miss G's swim class and I started to get everything ready to put the chicken in the oven I discovered it's still frozen solid! I briefly thought about waffles, but we don't have enough maple syrup. I was trying to think of something else we could have with the original side dishes, but I'm not having much luck with that either. Back to the drawing board!

Update: 4:41 PM: We're going to have left over meat from last night with the same sides as listed above. Who says compromise isn't good? ;oP

Update: 5:51 PM: When I cooked the corn on the cob it turned fluorescent orange! Fluorescent orange? No way that is natural or are we eating it...WTF? I pulled some frozen corn out of the freezer and we are having that instead.

Update: 3:50 PM: After planning out dinner I had a complete change of heart. Jamison wants lasagna so I'm making him a single serving lasagna and one for Alexis too. I'm going to make some Chicken Fajita Nachos for me since I'm not really in a real lasagna mood today. Sometimes you just have to go with the flow! ;o)

Tonight we're having breakfast for dinner. Jamison is having scrambled eggs, bacon and a gluten free roll. I am going to have an omelet or a vegetable scramble (I haven't decided which yet and will decide as I'm cooking) and Alexis wants fruit.

We are having chicken fajitas this evening (minus the tortillas for Jamison). I put the chicken and spices in the slow cooker this morning and I'll make some Mexican rice for me and some plain rice for Alexis and Jamison. I serve the fajitas with roasted onion and peppers, cheese, avocado, beans, a little salsa and sour cream. Jamison eats his plain, possibly with a little cheese and Alexis usually eats the components, but not the whole. The left over chicken is great on salads!

Update: 7:28 PM: I ended up making some "Taco" Rice instead. I'm sure you'll be seeing a recipe for that soon! ;oP

Last night I really regretted heating up the oven for the pizza no matter how delicious it was! It made our upstairs unbearably hot! So tonight we're having another slow cooker night! I put a pot roast into the slow cooker this morning. I'll make some mashed potatoes for Jamison and a cucumber and tomato salad for Alexis and me. We also have a few ears of corn left over from the other night so that will round things out nicely.

Jamison is having left over turkey and some sort of potato. Alexis and I are having pan seared scallops, corn on the cob with thyme (or maybe rosemary or Old Bay...) We also got some lovely local orange tomatoes today so I'll be making a tomato salad as well with fresh basil and thyme out of the garden. I should have tomatoes (among other things) also coming out of my own garden in the next week or so! How exciting is that?

It's hot! I mean really hot! So I decided this morning it was going to be a slow cooker night!

I put a turkey breast into the slow cooker with some black pepper, dried rosemary, sea salt and just a bit of olive oil. I've never made turkey like this before, but it works for chicken so why not? The breast is from a local, natural turkey farm and is big enough to have left overs for sandwiches and other things I want to play around with.

I'll make Jamison some mashed potatoes and pull a gluten free roll for him out of the freezer. I'll makes some mashed sweet potatoes for Alexis and I. I'll also have a side salad and Alexis will most likely have some cucumbers and/or tomatoes along with the rest of her dinner.

Tonight Jamison is having some beef fajitas meat (i.e. the filling for fajitas without the flour tortilla, which he can't eat) and some brown rice. Alexis and I are going to have some rice that incorporates the aspects of vegetable Enchiladas, without all the fat and calories. How about them apples? Alexis also informs me she wants cucumbers and cherry tomatoes...Easy enough!

Update: 3:13 PM: Alexis asked if she could have chicken noodle soup for dinner. I have both some chicken and broth that needs to be used up so I decided she might be on to something. The Enchilada Rice will wait for another day. :o)

Update: 7:50 PM: My sister called on the way home from their CSA and they decided to drop by since Ben had to work late. We had chicken noodle soup and biscuit muffins. Jamison had left over ribs and roasted potatoes. Baby cuddles won out over fajita beef! ;o)

As I mentioned before at our house when it's your birthday you get to decide what you want for dinner. Since today is Jamison's birthday tonight is his choice!

Tonight we are having slow cooker ribs with barbeque sauce and cheese fries. I'm also making a gluten-free yellow cake with milk chocolate frosting. I'll most likely make some vegetable for Alexis and I as well.

Even though it's a gloomy day and I'm currently without a grill the 4th still makes me think of a cook out! So we're having burgers! I'm having a Blue Cheese stuffed Old Bay Burger, Jamison is having a regular burger and Alexis is having some left over chicken. I'm also going to use the machine that Jamison's mom left with me from the Fish Fry and make some seasoned curly fries! We've got some fresh tomatoes and I'm going to make a cucumber salad to round things out.

Tuesday night my mom and I had chili dogs, Jamison and my Dad had hamburger "steaks" and Alexis had veggies. We also had some tomato slices, tater (I hate that word!) tots and some fresh sweet corn.

Last night we had roasted rosemary lemon chicken and mashed potatoes.

Tonight Jamison is having a steak and some roasted potatoes and I'm going to make a casserole/bake with wild rice, yellow squash and zucchini for Alexis and me along with a salad.

Tonight I'm tired. It's been a long few days and my parents are here so we decided to chill and ordered out. Alexis is getting edamame and rice, Jamison is getting steak hibachi, my Mom is getting sesame chicken, my father is getting beef with broccoli and I ordered some sushi (1 cucumber, 1 avocado and 1 salmon roll). Jamison is on his way to pick up our order now.

Jamison's dad brought a bunch of catfish that he caught so we're having a fish fry to help celebrate the big birthday. We'll have fried catfish, hush puppies, curly fries, onion rings and slaw.

Whew! It's been a long day and it's only past noon! Everything is purchased for the birthday party tomorrow, except for picking up the helium tank in the morning. I've got to whip up some punch, ice/decorate the cake, make some dip, decorate, vacuum, mop (AGAIN!) and various other things I'm sure I'm forgetting. Sorry, but no recipe today! I will however tell you what we're having for dinner...

I'm making some pork chops and roasted potatoes for the guys and Alexis, and some vegeterian chili for Jamison's Mom and me. We'll also have a salad and some homemade biscuits.

Jamison's family is arriving this afternoon for the birthday party on Saturday. We're going to have lasagna (I'll make one 8 X 8 meat lasagna and one 8 X 8 cheese lasagna), salad and homemade French bread.

We've had a very busy, very non-stop day. I'd like to say it's done, but sadly no. We're thick in the midst of party planning/cleaning! Plus we had to take the recycling to the drop off place so that took up a chunk of time too. So we're doing simple tonight. We'll probably have sandwiches or a salad or something along those lines.

What's For Dinner?: Alexis' Birthday Edition!

What's For Dinner Alexis Birthday Edition

We have a tradition that you get to pick what you want to eat on the day of your birthday. Alexis chose waffles for breakfast, pizza for lunch and drum roll please....

For dinner she has chosen spaghetti! Shocker I know! ;oP I'm going to make a fresh pasta topper with grape tomatoes, asparagus, onions, mushrooms and a little thyme and rosemary for me and regular spaghetti for Alexis and Jamison.

Tomorrow she'll get back on a more healthy, less bad carb laden track, but for today it's her birthday so it's all good! ;o) Saturday is her actual birthday. We're having a Tinkerbell party and her cake will be then! I hope to have pictures of the cake to share. We'll see how the cake ends up and if I can get a good shot with the cameras available. I miss my 20D! :o(

Update: 5:39 PM: While Alexis was playing I spent the past few hours weeding the flower beds. I'm in the mood for anything, but something warm, so I made up a veggie and fruit plate with cucumbers, cherries and blueberries for my dinner instead. Sometimes when you're hot, you just want something light and cold to eat! Jamison and Alexis are still having spaghetti. :o)

I have some boneless, skinless, chicken breasts thawed, but I don't know what I want to do with them yet. It's a very warm day today too so I know I don't want to heat up the oven. I've got some asparagus I need to use too...Who knows??!?!?

Update: 5:53 PM: Baking some chicken in the toaster oven with a little seasoning blend. Going to make some potatoes for Jamison and some asparagus for me and Miss G. Dinner will be a little late, but that's ok. :o)

Alexis and Jamison love spaghetti and I'm utterly bored with that dish. I've been trying to put them off, but tonight I'm going to make some for them. I however am going to make some homemade spinach ravioli with mushrooms. I'm also baking a gluten free loaf of French bread.
