Happy Memorial Day!

What's For Dinner Memorial Day Graphic

Today is the day that we stop and remember those who are, and have served our country, especially those that have paid the ultimate price. Our traditional form of celebration often involves food, as it often does.

Today we are having some people over for an impromptu celebration. We're having BBQ ribs and chicken, baked chicken legs with rosemary and thyme, baked beans, potato salad, deviled eggs, spinach artichoke dip with cut vegetables, squash casserole, yeast rolls and for dessert we're having gluten free cake, apple pie with a crumb topping, brownies and homemade vanilla ice cream.

Jamison is taking a final tonight. He's going to have some scrambled eggs and bacon before he sets out for class. I have a chicken in the slow cooker for Lex and Me. I'm not sure what we're going to have with it yet though. Maybe some roasted carrots? Or perhaps some butter noodles? Maybe both? I'm just not sure!

Tonight is homemade pizza night! Jamison gets pepperoni, ground beef, Parmesan and mozzarella on a gluten free crust. Lex is getting a personal sized black olives, Parmesan and Mozzarella on a regular crust. I'm also getting a personal size on regular crust, but I'm not sure what I'm going to put on it yet...

Tonight we're having a homemade pizza night! I make Jamison a big pizza because he likes the left overs and it makes work lunches easy. Lex and I usually have personal sized pizzas. Jamison gets his standard gluten free crust with ground beef, pepperoni, mozzarella and Parmesan, Lex gets a regular crust with black olives, mozzarella and Parmesan, and tonight I think I'm just going with a basic cheese pizza on a regular crust. (Can you tell anything about my mood by that choice? ;oP)

First up let me tell you that I have some guest bloggers lined up for next week! My mom and my best friend are coming up to help me celebrate my birthday! (And that's why I haven't been around much this week, I've been cleaning and getting ready to have some fun!) As I type this the guy is actually here fixing the oven/stove. So hopefully we'll have a fully functioning oven before the day is though! Fingers crossed!

Jamison went in to the office today and is leaving straight from there to go to class. I'm not sure what Alexis and I will have yet, but hopefully with a stove/oven that is in working order inspiration will hit!

So dinner is up in the air. The stove/oven is still out of order and the lovely property management company (and please read that with as much angst, sarcasm and hate as possible) has yet to even acknowledge that we put in a notice that the stove/oven has gone into shut down mode and nothing will start. If they haven't gotten back to Jamison by COB today I'm going to send an e-mail to the owner of the house because we have her e-mail address and when the fridge went out we ended up having to coordinate with her because seriously, the property management people are just horrible! I do have company coming in this weekend to help me celebrate my birthday and I do NOT want to be without the ability to cook! Sheesh!

So all of that to say I don't know what we're having for dinner as of yet. It will be something that can either be microwaved or cooked in the toaster oven.

First up let's talk CSA for a minute. I didn't show you last week's haul since I'm still figuring out the new computer thing and some of the info is still on the other computer. I'm slowly getting everything moved over that I need, but I'm finding that what seems like a simple task, is actually a pain in the you know what. So hopefully tomorrow I'll share last week and this week, which is actually the last week of our CSA summer. I'm hoping to have it all figured out by then. We'll see

What's for dinner? That is the question of the day! I'm craving Southern comfort foods, like chicken and dumplings, buttermilk biscuits, cobbler, etc. But this isn't my "cheat" day so I'm trying to forget about those (As if THAT is possible! ;oP) and focus on something a little more healthy.

Not sure what we are going to have yet. Maybe some yellow beans, salmon and roasted sweet potatoes...Hmmm. I'm sure I'll figure it out eventually!

Getting Things Situated...And What's For Dinner?

I got a new computer and I'm still trying to get everything sorted out. All of my recipe pictures are on the old computer, along with my photo editing software. I have to figure out what I'm going to do from here in terms of the new computer and I'm trying to get used to the new operating system (which sucks) and how the computer is set up. I'm also trying to remember user names and things like that too, so as you can see no graphics or pictures on this post today. It may be a day or two before I get everything switched over and get back to posting. I'm going to try and transfer some things over this evening, but the photo editing may be a bit tricky for a while...

So anyway, let's talk about What's For Dinner?!

Tonight I know Alexis and I are having roasted sweet potatoes and brussels sprouts. Jamison will have roasted potatoes, but I'm not sure what the main course will be. I haven't figured out that key element yet.

What's For Dinner? Plus Week 17 of Our CSA!

First up let's take a little peak into our CSA bag this week!

CSA Week 17

We ended up with baby carrots, garlic, yellow grape tomatoes, bell peppers (which I froze most of), a red chile pepper, jalapeños, more raspberries (which I'll most likely freeze for my sister since Alexis hasn't eaten all of the ones from last week yet and I'm not a fan), squash (which I froze), green beans (which I froze), red skinned potatoes, more basil (Which I hung up to dry...Anyone near me that needs any dried basil I can probably hook you up! ;op) and an eggplant which is buried under the basil.

We almost forgot to go pick up the CSA stuff given it was Labor Day, but I remembered just in the nick of time and we got over to the farm around 7 pm. Better late than never I guess!

Now let's talk about What's For Dinner?!

Tonight Jamison and Alexis want pizza so we're making some homemade pizza! Lex will have mozzarella, Parmesan, tomato sauce and black olives on a regular crust. Jamison will have rice mozzarella, tomato sauce, ground beef and pepperoni on a gluten free crust. And I'm going to play around with some sort of eggplant pizza for myself.

A Note, What's For Dinner? And Week 16 Of Our CSA!

FYI

Hey everyone!

First up I just wanted to let you know that I may not be posting a recipe every day on Monday through Thursday anymore. I will post a recipe on the the days when I can, but on days like today when things get a bit crazy it will most likely just be What's For Dinner?! Now that Lex is in 1st grade we've got more work on our plate so it makes it a bit more difficult.

Now let's take a peak in our CSA bag this week!

CSA Week 16

We got more basil (I already hung this bunch up to dry!), more raspberries (which Alexis has been eating since I'm not a fan), some pears, bell peppers, green/yellow beans, Roma tomatoes, zucchini, yellow squash and fingerling potatoes.

Now let's talk bout What's For Dinner?!

Tonight I am actually craving spaghettti and for those of you who have been around Dianne's Dishes for a while you know that is rare! Jamison will have gluten free spaghetti with meat sauce, Lex will have fettuccine noodles with tomato sauce and I'll have fettuccine noodles with a mushroom garlic sauce, which I'll add onions, green peppers, more mushrooms and possibly some ground beef, topped with freshly grated Parmesan cheese. We'll also have garlic bread (gluten free for Jamison) and a salad for Lex and me.

What's For Dinner?

Tonight Alexis and I are having some sort of tomato soup. I'm not sure what I'm going to put in it, but I know I'm going to use some of the tomato sauce I had left over from canning and some of the tomatoes. I ran out of jars when I was making sauce and had about a quart and a half left to go. When I was canning the diced tomatoes I dropped a jar. The jar didn't break, but the lid popped off so it wouldn't can properly. I put it in the freezer instead. I'm going to use that jar too. Maybe I'll add some corn and/or green beans and/or potatoes and/or basil and/or black beans.

Jamison has class tonight and will run over and pick up our CSA on the way. I'm not sure what he is having yet.

What's For Dinner?

Woo! What a day!

Alexis had her first 1st grade review this morning. On the way to the review we ran by the bank and then on to the gas station. After that we went to the actual review. From there we went to the orchard (I got 28 more pounds of "seconds" tomatoes...Tomato sauce and salsa here I come!) and returned our library books. Next we stopped for lunch and hit the grocery store while we were right next to the store so I wouldn't have to venture back out.

On the way home we ran over a huge snake. I saw it, Jamison didn't. Even outside the car it gave me the heebie jeebies! (Snakes are one of my phobias, closely followed by spiders, thunderstorms, enclosed spaces, crowds and heights..I just have them all covered don't I? ;oP) It made a decidedly crunching noise, sort of like when you run over one of those meter things they put down to count traffic sometimes, as we ran over it twice (front and back tires!) and Jamison said it curled up in a ball when we hit it. Ick! All of this and we still got home in time for Lex's 1 o'clock nap and I only managed 3 1/2 hours of sleep last night. A bit bleary eyed, that's me!

So today I'm just posting What's For Dinner? and not a recipe too. That's twice this week I know, but it's been a busy one!

Tonight we're having left overs and I'm having light fare. Jamison will have left over roast beef and rice, Alexis will have left over pizza and I'm having a tomato salad of some sort.

What's For Dinner? Plus Week 15 Of Our CSA!

First up a peak at our CSA haul this week!

CSA Week 15

We got more basil (I'm drowning in basil!), cherry tomatoes (which Alexis devoured almost immediately), raspberries (of which I am not a fan, but Alexis has been eating), a large zucchini, a yellow squash, some heirloom tomatoes, jalapeñoes and some potatoes.

We also purchased the 40 tomatoes I mentioned earlier apart from our weekly share so I could can some:

Tomatoes Oh My! And What's For Dinner?

FYI

I'm up to my ears in canning today so I will not be posting a recipe. We obtained 40 pounds of tomatoes from our CSA and I'm busy getting them canned for the winter! Alexis and I love tomato based soups, so this will be a great way to extend the season.

I have the tomatoes peeled and am waiting for the pressure cooker to warm up. This is my first time pressure canning, or using my pressure cooker in general and I have to admit I'm a bit terrified of the thing (OK...It scares the bejesus out of me!), but we'll see how things go!

Like I said no recipe today, but I will however tell you What's For Dinner?!

Tonight I'm making chicken gumbo for myself. This is not something that Jamison would touch. Alexis may try it, you never know with her. For them I'm making center cut pork chops and brown rice, which I'll use some of with my gumbo. Alexis will also have a vegetable, most likely tomatoes or cucumbers.

So...I'm feeling blah today? Anyone else? Alexis is having a day too, so it's been just one of those days all around! I have no clue what I want for dinner.

Maybe we'll do breakfast for dinner in the form of eggs and/or an omelet for me? Or perhaps will have some chicken quesadillas with beans. Only if we do the first, I'll have to make something else for Lex because she doesn't like eggs, and if we do the latter I'll have to make something else for Jamison because that's too "exotic" for him. No matter what I ultimately fix, I plan on it being simple and mostly done before I start!

What's For Dinner? Plus Week 14 Of Our CSA!

First up let's take a peak into this week's CSA bag!

CSA Week 14

This week we got some red potatoes, squash, slicing tomatoes, a cucumber, some peppers, some jalapeñoes, some heirloom tomatoes, more basil and some green beans!

No I haven't dried any of the previous basil. I now have two "vases" of basil sitting on my counter. I've got to get around to that...Still no freezer space for pesto! I'm planing on using some of the potatoes, squash and tomatoes tonight in my meal.

What's For Dinner?

Tonight is lasagna night! Jamison will have his standard meat/cheese/sauce/gluten free noodle combo. I'm going to make a vegetable variety for myself. Lex will eat one or the other, you never know with her! Plenty of left overs for Jamison and I'll freeze what is left of mine. I think I am going to attempt to make some lasagna noodles as well. I've made pasta before, but never those noodles specifically. We'll also have a salad (or Lex and I will anyway) with local vegetables.

Update: 9:05 AM: 08/19/2009: So the lasagna thing didn't happen last night! When it came time to cook dinner I just wasn't in the mood. (Shocking isn't it? ;oP) We had to run an errand so we picked up something at a local pizza/sandwich place while we were out.

What's For Dinner? And What We Found At The Farmer's Market!

First let's talk some Farmer's Market goodies!

I've been meaning to make it back over to the Farmer's Market for a while now, but something always comes up. You know how life goes. But this afternoon Miss G and I headed over to hopefully find watermelon, cucumbers and tomatoes and we did and then some!

As I said we found our tomatoes, cucumbers and our watermelon! We also found some blueberries, some okra, some peaches and some goats cheese!

I was ecstatic to see the okra, it's the first I've seen all year. Okra isn't really easy to find here in Maryland either, but it's getting easier. When we first moved here in 1999 I couldn't' find it anywhere and people look at me like I was crazy if I asked if they had any!

The peaches are so ripe you can smell them five feet away! I was also happy to see some late in the season blueberries and of course if you've been around Dianne's Dishes for a while you know about my adoration of goat cheese in general! Now that's what I call a productive trip!

Tonight is a mixed bag and it's because of me this time. Jamison and Alexis want spaghetti and as you know I'm about spaghettied out! So they are having spaghetti and I'm going to make a fresh corn chowder. I think I may also go ahead and cook up the okra to freeze.

What's For Dinner? Plus Week 13 Of Our CSA And A Peak At What We're Harvesting At Home!

First up let's take a peak at our CSA bag this week!

CSA Week 13

We got zucchini, squash, another melon, some more hard necked garlic, more basil, yellow snap beans, fingerling potatoes, peppers, tomatoes and edamame!

The basil went in with the basil from the previous weeks:

How's that for a big bunch of basil! I have used some of it, but still haven't gotten around to drying it yet. Still no room in the freezer for pesto either! That's about 18 inches of basil from one side to the other!

Now let's give you an idea of what's starting to come in in our little front porch container "garden" every few days or so:

Alexis usually munches on what we pick faster than I can get a photograph! Tomatoes, zucchini, cucumbers, eggplant, jalapeñoes and potatoes! We've also had some bell peppers, a few chick peas that we've been munching on right off the plant, some banana peppers and peas.

If you noticed in the background of the top CSA picture there are some apples that came off our trees. Out of all of our apples that the tree made, we were able to save 6 of them! The deer got the rest. Oh well! I'm going to do a garden update soon...I just need to find the time to sit down and write down what is happening!

Yesterday totally got away from me and I didn't get around to posting What's For Dinner? so I'm going to give you two for the price of one today!

Last night we had barbeque chicken from the slow cooker, roasted fingerling potatoes and fresh tomatoes with ranch dressing.

We're having our first real heat spell of the summer, which I suppose is good since it's the middle of August! This my friends is why I'm not a fan of summer! Yesterday we topped out at 98 with god knows what humidity and today is much of the same. It's a stay inside or fry sort of day so tonight's goal is not to heat up the house! Luckily I have a bunch of yummy left overs so left overs it will be! It's a microwave night! Too hot to do much else!

Jamison is having left over steak and rice. Alexis and I are having left over shrimp, corn on the cob, tomatoes, zuchini and squash and possibly something as yet to be decided out of this week's CSA bag, which Jamison will pick up on his way home.

What's For Dinner? Plus Week 12 Of Our CSA!

First up let's take a peak into our CSA bag from this week!

CSA Week 12

This week was quite the bounty! We had shallots, red potatoes, another cantaloupe, zucchini, squash, yellow snap beans, beets, basil, a bag of slicing tomatoes and a bag of cherry tomatoes!

Now let's talk about the beets...

I knew it was inevitable that at some point we'd most likely end up with a few beets. I'll be honest with you and tell you up front I'm not a fan. I've tried them roasted, pan fried, boiled, pureed into soup, deep fried, steamed, pickled, raw, etc. and to me they just have a really earthy flavor....Well ok they taste like dirt to me! Sorry, but they do! Someone told me you can make a chocolate cake out of beets. This interests me I must admit, though I will readily tell you one part of me is all for this idea, while the other part of me wonders if it would be a big waste of chocolate cake! ;oP I'm not sure what I'll do with these....

And basil...I still have the other two bunches from the previous two weeks in a large glass of water on the counter next to the sink. The other two bunches are still really fresh, believe it or not and have actually grown! Bet you didn't know you could "grow" basil hydroponically. I have the ingredients to make pesto, but haven't done it yet because I still don't have freezer space!

We also got a cantaloupe last week and let me tell you this is one of the best cantaloupes I've ever had! Firm, yet sweet...It was just perfect! The county in Tennessee where I grew up prides itself on its cantaloupes, but let me tell you this one easily gave them a run for their money! Yum!

Oh well. Now let's get down to What's For Dinner?!

Tonight Jamison is having steak and mashed potatoes. (Do you see a pattern with his food! ;oP) Noelle made me start thinking about veggie burgers with her response to What's For Dinner? yesterday so Alexis and I are having homemade veggie burgers on flat bread with a tomato salad.

What's For Dinner? And Week 11 Of Our CSA!

Whoa what a day!

This morning I had a meeting so Jamison took Miss G over to camp. I got home and then not too long after that headed back over to pick up Miss G. Alexis ate lunch (which she helped back...black olives, a clementine and cantaloupe...How's that for varied? ;oP) and then laid down for her nap, while I did a few things, and when she got up we discovered that one of her butterflies had "hatched". (She got a butterfly garden for her birthday. It was sort of our "big" science experiment for the summer!) So we had to venture back down the mountain, and back over to the grocery store in the next town over, to grab some carnations to be sprinkled with sugar water for the emerging butterflies! It's been go, go, go!

And now to dinner!

Tonight we're having cheeseburgers. Jamison will have tater (I still hate that word!) tots. I've also made a macaroni salad that I wanted to try out for the weekend. Our Sunday school class is getting together food to take to the shelter on Sunday and I wanted to try out the salad before I made it to send! (It turned out good...You'll see it soon!) We'll probably have some fresh tomatoes and cucumbers as well.

CSA Week 11

As the bags get bigger it's hard to fit it all into the shot! We got a bag of new potatoes, a cantaloupe, cucumbers, 2 large tomatoes, a bag of cherry tomatoes, another hard necked garlic, more basil (I haven't even touched the basil from last week yet...It's still in a glass of water on the counter!) and a bunch of squash!

I'm going to hang the basil up to dry later today. I'm going to end up freezing part of the squash most likely too. I'll have to find room in the freezer...Somewhere! Everything else we'll enjoy as the week goes along.

Have I mentioned how my CSA surprise on Monday is one of my favorite parts of the week??

I'm off. Hopefully I'll be back tomorrow with a recipe. School starts for us on Monday so I'm up to my ears in planning. I'll definitely be back for What's For Dinner? though so if there isn't a recipe I'll catch you tomorrow afternoon!

How was everyone's weekend? We had a really great one! On Saturday we saw Harry Potter and the Half Blood Prince and then ran some errands and had dinner out. On Sunday we went to church and then spent the afternoon hanging out. This morning Alexis started her week long dance/drama/music camp and she had a ball! Can't wait to see the "show" on Friday night! Should be fun! They asked that we bring in juice and cookies for the remainder of the week so Lex and I are making some chocolate chips cookies to take in the morning.

Anyway....Dinner!

Jamison is having steak and roasted potatoes. Miss G and I are having swordfish, corn on the cob and heirloom tomato salad.

What's For Dinner? Plus Week 10 of Our CSA!

First up this week's CSA bag!

CSA Week 10

We got yellow squash, zucchini, cucumbers, tomatoes and lots of basil!

I'll most likely dry the basil, since I'm not a huge fan of the taste of fresh basil. I thought about making pesto, but the problem with pesto is that after I've had a tablespoon or two I never finish the rest of it. I suppose I could make a batch and freeze what I don't want immediately, but I'm a little low on freezer space right now. The rest of the items will most likely be used before the end of the week!

What's For Dinner? And Week 9 Of Our CSA!

First up let's take a look at what we got from our CSA this week:

CSA Week 9

Swiss chard, potatoes, green beans, some more stiff necked garlic, plum tomatoes and some green tomatoes! When I saw the green tomatoes I was so happy. I've been thinking about making some "fried" green tomatoes, but I didn't want to sacrifice any of my own tomatoes to do so...Now I don't have to! I had meant to share this yesterday, but I got side tracked. What can you do?

What's For Dinner? And What's Up With FaceBook.

First off let's talk about FaceBook for a moment....

For those of you who follow me on FaceBook you may have noticed that things are different, and to be honest I don't know what it looks like inside FaceBook because I've been shut out. I don't know if I'm still there, or I've disappeared or what.

It all started one day last week when I logged on one morning and noticed that my picture had been changed and I hadn't changed it. I immediately realized that my account had been hacked so I changed my password and notified FaceBook. FaceBook, effers, finally got back to me two days later to tell me that "Hey you've been hacked!" and that they changed my password for me. Thanks! I would never have figured THAT out by myself! Thanks for stating the obvious! So by reporting that I had been hacked, I also told on myself for having a pseudonym without even knowing I couldn't have one. Lovely!

While they were assessing my account they also decided to suspend me because my account was not under my real name, but under my blog's name. Apparently that's a no no at FaceBook (Who the hell cares if you use a pseudonym or your real name other than the idiots who are running FaceBook?) so they decided they needed to disable my account. I have asked them to reconsider, but here we are several days later and I still haven't heard from them. As you can tell they are slower than molasses in January! I'm hoping they will get back to me today, but that remains to be seen!

I didn't use my real name because I didn't want it associated with Dianne's Dishes after some stalkerish activity that went on on my personal blog a few years ago that ranged from several people stealing pictures of Alexis when I still posted pictures of her face and posting them elsewhere, to one person even going as far as to take those stolen pictures and posting them pretending that Alexis was their child. Who does that?? So you can see why I'm a little leery of posting her face and revealing my real name or my exact location.

I'm not sure where this leaves me on FaceBook since I don't really want an account with my name, or if I had one I wouldn't associate it with Dianne's Dishes anyway. If they refuse then I guess my FaceBook days are over, which is sad because I had just begun reconnecting with some people from my childhood and that was really nice.

Anyway, all of that to say, if you're a friend on FaceBook and notice I'm gone then that is why. I'll miss Facebook if this is the end. Hopefully I'll be able to tell you in the next day or two what they have decided. Until then we wait. Have I mentioned what effers they are??

Tonight is a mixed bag...

Alexis is having black beans, cantaloupe and cucumbers. I am having left over gazpacho and left over shrimp from this weekend. Jamison is having steak strips and roasted potatoes. Alexis may munch on some of Jamison's steak or some of my shrimp, but lately she's been eating more vegetable proteins than that of the animal variety. Whatever floats her boat! As long as she is eating protein I'm not concerned about her not eating as much meat.

What's For Dinner? Plus What We Picked Up at the Orchard!

This morning Alexis and I set off to go over the mountain to the library. While we were over there we also decided that it would be a good idea to stop by the orchard. Her mission: Peas! (And as you can see we found them!) My mission: Blueberries to make some jam! (We got those too! And the jam turned out great...You'll see it tomorrow!)

We also got some small plums, yellow beans, cucumbers, yellow tomatoes and "ugly" tomatoes. What are those you ask? Those are the ones that some people won't buy because they have a vein here or a spot there. Perfectly good, perfectly delicious vine ripe tomatoes that some people are too snobby to buy! So for a dollar more, you get twice as many tomatoes. Works for me!

Now let's talk about What's For Dinner?....

Alexis and Jamison want spaghetti for dinner. At first I wasn't really all that thrilled by the idea (I never am!) but after our visit to the orchard my tune changed! Jamison and Alexis are having their standard (noodles and sauce for Lex, noodles, ground beef and sauce for Jamison) and I'm going to use some of the things I picked up this morning, along with some herbs from my front porch, to make a fresh pasta topper.

What's For Dinner? As Well As Our CSA Week 7!

Well as you can see I didn't have time to get a recipe in last night. Oh well. Life happens. You just have to go with the flow!

Tonight we're having a slow cooker pot roast, with roasted fingerling potatoes from our CSA, as well as left over corn and asparagus. Alexis is having homemade chicken noodle soup.

And now let's talk about what we got from our CSA earlier this week.

CSA Week Seven

We got snow peas, fingerling potatoes, more garlic, 2 large cucumbers and some green beans. We've already used one of the cucumbers and some of the snow peas. I'm cooking the fingerling potatoes with the roast for tonight in the slow cooker. I plan on using the green beans on Saturday for our 4th of July celebration. (Oh how I wish I had a grill!) Next week our CSA has the week off because they are harvesting wheat, so we'll get back to updating the week after!

First up let me just say...How is it possible that it is already July?? It seems like just yesterday it was January. Time most definitely flies!

Tonight Alexis and I are having salmon with dill, roasted asparagus and roasted corn on the cob. Jamison is having a steak and roasted potatoes.

What's For Dinner?

Whew what a day! We took Alexis for her 6 year check up today and then we went out and about. Grams and Pop got her a new bike for her birthday because she had gotten too tall for her old one and then we went exploring. We also ran by the orchard and picked up some fresh peaches, blueberries, peas and yellow squash. We left about 9 this morning and got back around 5:30 this afternoon. Busy, busy, busy!

For dinner we had left overs basically. We had the squash we picked up today, some green beans and new potatoes from last night, some sandwiches, salad, etc. For dessert we made some homemade peach ice cream.

What's For Dinner On A Busy, Busy Day?

Boy has this been a busy day!

This morning Alexis and I set off for the library and to go pick up some things for her birthday party on Saturday. When we got home I realized I had forgotten to grab some lemons so while Miss G took her nap, and Jamison did his conference call downstairs, I headed to the store to grab some lemons. The good thing about living on the side of a mountain is that it's about 10 degrees cooler up here than down in the valley, the view is amazing and well what's not to like? The bad thing about living on a mountain is the nearest town that actually has a grocery store is about 12 miles away. Today when I set off in that direction a truck had had some sort of accident and was jack knifed in the middle of the two lane road, effectively shutting down the whole road. So I had to turn around, go in the other direction and go to the second closest town, which is about 18 miles away. Oh well. It happens...Nothing I could do to change anything. Not going to get upset over something out of my control.

When I got home Alexis wanted to try out her new Easy Bake Oven that she got for her birthday from Aunt Darlene. We were going to break it in yesterday, but I didn't have a 100 watt bulb so we had to get one today while we were out this morning. All I have on hand are CFLs and those wouldn't work. Once we had the light bulb in place we made a little cake with chocolate frosting. I can't wait till the cookbook for the EBO arrives tomorrow, who knows what in the blazes is in those mixes! Once I get an idea of the scale of the recipes in such a small amount then Lex and I will be able to figure out recipes on our own!

While her EBO cake was baking I baked two of the four of the 13 X 9 inch sheet cakes that I'm going to need for the ice shelf/water for Miss G's penguin cake. I also baked a batch of Blueberry muffins to have for breakfast on Saturday because I desperately needed the space in the freezer and using the blueberries gave me a bit more space! Next up I need to make a loaf of bread for the breakfast casserole that will also be part of breakfast Saturday.

I am also making a batch of pineapple chicken salad for Saturday as well. That's next on my list! Then I need to make and decorate penguin sugar cookies, penguin appetizers and bake 2 more sheet cakes and various little sized cakes to use for hills, etc. Tomorrow I'll tackle getting the cake together and decorated!

Woo! My feet hurt! ;oP

Anyway, so I've been busy and as you can see I've been a little too busy today to have time to post a recipe. I will tell you what we're having for dinner though.

Tonight is a comfort food kind of meal. I like that sort of thing when I'm tired and I'm definitely wiped out today. We're having smoked pork chops, peas, mashed potatoes and roasted asparagus.

What's For Dinner Alexis Birthday Edition

As is the tradition at our house Miss G gets to decide what she wants for dinner on her birthday and she has chosen homemade pizza! Sounds good to me! (If you want to see my mushy tribute to my little girl hop over to Daffodil Lane and see what I had to say about her 6th birthday.)

We got more potatoes, red spring onions, asparagus, snow peas, another hard stemmed garlic and some sort of green that I'm not exactly sure what it is. I'm waiting on the newsletter to be sure!

Tonight was a light night all around. Alexis had black beans, watermelon and cantaloupe, I had watermelon and pineapple and Jamison had a grilled turkey and swiss sandwich on gluten free bread.

What's For Dinner? Plus What We Picked Up At The Farmer's Market!

Farmer's Market 6/18/2009

Today was the first day of our local Farmer's Market so Alexis and I ventured over to see what we could find. I had hoped they would have some peas, but alas we didn't find any. We did however find several other things! We got some eggs though next week I'm going to see if I can find someone that is selling them in paper cartons instead of Styrofoam since I can't recycle that here. I finally found some rosemary plants and picked up some more thyme just because. Alexis picked out a loaf of brioche from a local bakery that had a stall. I also got some more garlic scapes...I just love garlic scapes! And last but not least Alexis wanted to try some blue potatoes so we got a couple to try! If she likes them we'll get more next week. I really like the blue variety. I just love the Farmer's Market!

What's For Dinner?

Tonight is another slow cooker night! It's currently 59 degrees outside. No...You didn't read that wrong...It's 59...In the middle of June! Sadly in a week and a half when I'd like for it to be cool so we can have Miss G's party outside it will be 108 degrees with 1000% humidity....Welcome to Maryland! ;oP I'm crossing my fingers that it will go back to the 70's and stay there until after her party on the 27th. We'll see how it goes.

Anyway......

I have two Cajun pork chops in the slow cooker right now doing their thing. Alexis isn't a fan of spicy so she's going to have some left over chicken. I'll make some rice as a side dish for Jamison while Alexis and I are going to have some corn on the cob and a squash/zucchini dish as our sides.

What's For Dinner? Plus Week Five Of Our CSA!

CSA Week Five

First let's start with this week's CSA bundle!

We got more strawberries, carrots, red skinned potatoes (my favorite!), shell peas and something that is either a leek or onion! Not exactly sure. At first I thought it was hard necked garlic, but I don't think so now. I'm waiting for this week's newsletter to know for sure! It has a stiff neck and is a bit strong for a leek, but I'm just not sure! Either way it's good though!

Update: 6:01 PM: It was garlic when I cut into it! It went well with the roasted potatoes!

Now let's move on to what's for dinner!

I have some beef stew meat in the slow cooker and am cooking it like I do pot roast. We are also going to have roasted red skinned potatoes and a spinach salad for Lex and Me. (Note: Several of you have asked me what a spinach salad is. Nine times out of ten when I make a tossed salad I use spinach as the base. Alexis and I are big fans of spinach!)

What's For Dinner? Plus Week Four Of Our CSA!

CSA Week Four

First off let's look at what we got from the CSA yesterday! More strawberries, asparagus, lettuce, spring onions and mint! Jamison amused me when he got home because he told me something in the bag "reeked" and he had had to drive home with his windows down. I assumed there was garlic or onions or something and chalked it up to his overly sensitive nose, but his idea of "reeking" was the mint! That amused me given fresh mint is one of my favorite smells! Silly Jamison! ;oP

You'll see a recipe up tomorrow using the strawberries and mint. It's simple, but so delicious!

Tonight we're having pizza! Jamison will get a gluten free crust with pepperoni and ground beef. Alexis will get a whole grain crust with cheese and black olives. And for me...I'm going to play around with another Portobello Mushroom pizza! If it's any good I'm sure you'll see it soon!

Tonight is burger night, which may or may not be bunless depending on if I decide to make buns or not! Jamison is having a regular burger, Alexis and I will have chicken burgers. I'll also makes some oven fries and we'll have a side salad for Lex and me.

Update: 7:19 PM: I ended up making meat loaves instead. I made a plain meat loaf for Jamison and took the ground chicken and made a meat loaf with that for me. Lex had some left over chicken. I also made some Parmesan roasted potatoes and some strawberries with mint for dessert.

What's For Dinner?

First before we get started I have gotten several e-mails asking what CSA stands for. Wikipedia has a nice little break down, but it stands for "Community Supported Agriculture". Basically you buy a "share" of crops at a local farm and you get to pick up (or some deliver) a share each week. It's a fun way to have fresh fruits/vegetables as the season progresses!

The other thing that several of you seem to be curious about is which CSA we are a part of this year. We joined (for lack of a better word) Summer Creek Farm in Frederick county, up in Thurmont this year. I liked their philosophies and if you've been around Dianne's Dishes for a while you know I'm all about organic whenever possible!

Now let's get down to dinner!

Tonight is more of a left over night! Jamison is going to have left over pork chops and mashed potatoes. Alexis and I are going to have left over chicken, the last of the carrots/fennel and some fresh strawberries from the CSA.

Update 5:55 PM: I ended up taking the left overs and making chicken soup for Lex and I. It's in the 50's here today and rainy. It just felt like a soupy kind of day!

I'm going to roast a chicken to go along with some left overs from last night. Then I'll have left over chicken to do other things with too. I just love that about roasted chicken! I haven't decided yet whether I'll go the Old Bay route or something with thyme and rosemary....

Jamison will have left over mashed potatoes and Alexis and I are going to have some of the left over carrots/fennel dish that I made. I forgot about playing around with the chard/garlic scapes last night so I'm going to do that tonight as well. We also have some left over spinach salad.

What's For Dinner? Plus Week Three Of Our CSA!

First let's take a look what we got from our CSA this week!

More strawberries (Have I mentioned how much I LOVE strawberry season??), garlic scapes, chard, asparagus (Also a favorite!) and radishes! I just love Mondays...It's like a little surprise waiting for me at the end of the day each week!

Tonight we are having company so things are a bit more fancy that usual....

For dinner I've got a pork loin I'm going to cut into chops. We're going to have mashed potatoes, a carrot/fennel dish and I'm going to play around with the chard/garlic scapes. I also plan to have a tossed salad with a choice of either Ranch of Blue Cheese dressing.

For dessert we are having strawberries, peaches and blueberries, on top of Paula Deen's Pound Cake with some whipped cream. I'm going to make some gluten free peanut butter cookies for Jamison, since he obviously can't have the cake.

What's For Dinner: Memorial Day Edition!

We've had a perfectly amazing, perfectly lazy, all around perfect weekend! We've watched movies and got some things off the DVR. We've read and played games. The only time we ventured out of the house was for church yesterday morning. It was great! I love slow, fun, restful weekends and those seem to be few and far between around here!

This afternoon we've got to run a few errands. We need to pick up our tall ladder from a friend and then we're headed to pick up our CSA bag for the week. Can't wait to see what is in there! I'll share that tomorrow, along with What's For Dinner as I did last week.

Anyway, back on topic....

First let me say thank you to all Service members past and present and all of the things they do to help keep us safe. You all are amazing! You do a fabulous job...Keep up the good work! Jamison's dad was in the service so we thank him today as well!

Now let's talk about dinner....

On days like today I sure miss our grill! It was majorly hosed and not working properly so when we were moving our neighbor thought he could fix it and we gave it to him. We haven't replaced it yet since Jamison isn't a huge fan of grilling to begin with, but when days like Memorial Day roll around I sure wish we had a grill!

If I had a grill I would grill some shrimp and burgers, along with some asparagus and onions, perhaps some mushrooms and potatoes...But since I don't have a grill that one is out! Oh well.

Now let's talk about what it will more likely be! I'm sort of leaning toward a veggie burger for myself and maybe some sweet potato oven fries. Maybe a burger for Jamison and regular oven fries. Alexis isn't a burger fan (Nor does she like hot dogs or tacos...She's more of a gourmet kind of kid!) so she'll most likely get chicken or maybe some steamed shrimp and share the sweet potato fries with me. Alexis and I will most likely have some freshly cut vegetables as well.

Update: 8:14 PM: Alexis and I had spinach and strawberry salads and Jamison ended up having a turkey melt!

Tonight we're going to have pasta. Jamison and Alexis will have spaghetti and I'm going to make a fresh pasta topper for me. Alexis and I will also have a mixed salad.

Update: 3:52 PM: OK, I didn't realize we're out of ground beef. I tried to sell Jamison on ground chicken for the spaghetti sauce, but he wasn't convinced. So we're going to have steaks, baked potatoes and roasted asparagus instead!

CSA Week One

Now let's talk about what we got from our CSA the first week!

The first pick up gave us two types of lettuce, some dandelion greens, spinach and a bunch of asparagus. They also gave Jamison the handy dandy tote you see in the back of the picture so he can use it to pick up our future shares. There was also a copy of Edible Chesapeake. How cool is that?

For lunch I made a big salad with the greens, lettuce and spinach. I'm going to use some of the asparagus and spinach in my pasta topper tonight and of course the greens/lettuce for the salad. Funnily Alexis has been wanting to try dandelion greens for a while now, but since I don't know the history of our yard since we've been here for less than a year I wouldn't let her just try them out of our yard in case the people who lived here before us were big pesticide or herbicide fans. So now she'll get to try them! Fun, fun!

Local and organic...How much better can it get? I can't wait to see what next week will bring!

My brain is fried! It's been that way all day and I finally realized why about 20 minutes ago. I stayed up late reading, though I had intended to go to bed early, and then just as I was going to bed around 12:45 AM or so Miss G woke up with a bad dream so it was closer to 1:30 AM when I fell asleep. Somehow I had forgotten that fact and kept wondering why I was walking around like a zombie and Miss G was annoying me by bouncing off the walls! She's not bouncing so much as I'm just moving slow in a slightly sleep deprived sort of state!

All of that to say that I have zero interest in cooking today. Shocking isn't it? Me not wanting to cook! So I'm going to get Jamison to pick up dinner on the way home. He'll have angel hair rice noodles with beef, Lex will have edamame and rice and in my zombified slow mind thinking state I can't decide whether I want Shrimp and Scallop Hibachi, Sushi or Szechuan Chicken....Decisions, decisions!

What's For Dinner on a "Circus Day"?

The day has just gotten away from me! Today is what I like to call a "Circus Day"! What's a "Circus Day" you ask? Well I'm glad you asked that question! I'll tell you! ;oP

A circus day is one of those days where everything is just upside down crazy. And because of the upside down craziness your child(ren) bounce off the walls due to the upheaval. So if the circus were to come calling and tell you they were looking for hyper children whose specialty was bouncing off the walls, then well, you'd know just where to lead them! ;oP

As you can see I haven't had time to get a recipe up today, though I had hoped to! So much for good intentions, but you know what they say about those! Tomorrow should bring Link Love though! I'm going to try and sit down tonight and get that together.

I'm also going to try and get entries lined up this weekend for next week, though it's going to be a busy weekend for us. Lex's new art class starts on Saturday morning, I've got to finish up lesson planning for next week, general weekend cleaning, laundry, planting some stuff, not to mention church on Sunday and various other odds and ends that have to be done before Monday comes around. Do you remember when weekends used to be slow and relaxing? Oh I miss those days! ;oP

Tonight we're going to have something chicken related. I have a few boneless, skinless chicken breasts thawed, but I'm not sure what I'm going to do with them yet. Alexis and I will most likely have some tomatoes and cucumber along with whatever else I end up making.

So I know Easter isn't until Sunday, but I thought it would be fun to share what we plan on having for Easter dinner since Jamison's parents will be here tomorrow and I most likely won't be online that much since we'll be having fun!

We are going to have our feast Saturday afternoon/evening. We are having ham, a turkey breast, mashed potatoes, carrots with dill, peas, deviled eggs, rolls (both regular and gluten free for Jamison) and salad.

For dessert I'm making a coconut pie for Jamison's dad and whoever else wants to share, gluten free chocolate chip cookies for Jamison and Alexis wants to make a chocolate Easter Bunny cake!

Jamison has class this evening and I'm having one of those head feels like it's floating somewhere above my shoulders but not attached allergy days. I knew there was a reason I hated spring! Temperature wise it's nice (or would be if it ever warms up for more than a day or two before going back to winter like temperatures), but this pollen is just too much. Oh well!

Anyway, I think Alexis and I are going to have some leftovers. We have some pulled pork in the fridge and some left over salad.

Update: 8:42 PM: I got sidetracked this afternoon getting everything together for lessons next week since my mom and dad are going to be visiting. I usually do this on Sunday afternoon, but since they'll be here sometime on Sunday I wanted to get it done beforehand. When it was time for dinner I realized I hadn't started the lasagna. We had to go pick up my car from being serviced today, so I whipped up some scrambled eggs, bacon and toast before we left. Lex doesn't like scrambled eggs so she had left over peas and bell pepper strips (her choice) with her bacon.

Today has been a long, long day. I've been doing a spring clean of the house. Bathrooms, vacuuming, mopping, kitchen, going through things, oh my! Yippee! (Not!) I'm still not done, but I'm calling it a day for now. Tomorrow is however another day! ;oP So when Jamison heads out to class Miss G and I are going to go to a local pizza place for dinner that has really amazing pizza, along with sandwiches and things of that nature as well. I think I've more than deserved a night off after all the work I've done today! ;oP

What's For Dinner?

We're going to do things a little different today and do What's For Dinner this morning and then have Better Bites this afternoon. We had a crazy, crazy weekend and I didn't have time to get this morning's entry written up! So check back later for that!

Remember when weekends were about relaxing? Lately our weekends have just been crazy, upon crazy! Saturday we spent the morning running errands, and then the afternoon at Alexis' art class. By the time we got home it was time for dinner (I made Mexican) and then on to getting the little non-napped princess to bed.

On Sunday we went to church, went out to lunch. (More Mexican....Yum! Jamison actually isn't a fan and the first words out of his mouth were "Didn't we have Mexican yesterday?" But he indulges me so Mexican it was! ;oP) After lunch we set off in search of some sand for the driveway and a fire retardant hearth rug so we can use the fireplace if we need to. (All of this ice makes me nervous about power outages!) Two stores later we finally found the sand, but no rug. I ended up having to order one off of Amazon! We got home around 3:30 or so and then I immediately started lesson planning for the week.

Several hours later Jamison fed Alexis dinner and then got her into bed, while I finished up lesson planning for the most part. (I still have some things to get ready for the rest of the week.) After Miss G was in bed I finally stopped the constant motion that was the weekend and Jamison and I sat down on the couch with a big bowl of popcorn and watched "Pride and Prejudice". (The newer version...The Colin Firth version is in my NetFlix queue next! I can't believe I haven't seen either of those!) Needless to say, other than the movie it was a move, run, do, do, do sort of weekend and unfortunately they all have been that way lately! I really am NOT a fan of those kinds of weekends! I much prefer the slow, mellow sorts instead!

Anyway, what does that have to do with dinner tonight? Absolutely nothing! So let's get to the dinner part now, shall we? ;oP

Jamison is in class this evening and Alexis and I are both a little sniffley/snarfully so we're having soup. It's a new idea I'm working on, with chicken, tomatoes, thyme, etc. I've been thinking about it for a while, but just never got around to trying it out. Tonight is the night! I'm sure you'll see the recipe soon! ;oP

Wow...What a morning! We did lessons, ate lunch and then I just spent the past two hours shoveling ice. Snow I actually enjoy shoveling...I'm weird like that! But ice on the other hand...Not so much! But needless to say I'm beat, so no recipe today...My arms are shaking! There will be a bonus cupcake recipe tomorrow, even though it's Friday, to celebrate my 2nd blogaversary...2 years...How is that possible?

Anyway, I'm not sure what we're having for dinner yet, but possibly something in the Mexican family, IF I actually have sour cream. The main drive (which is about .2 miles long) is still covered in ice and I don't particularly see myself shoveling my way out of that to satisfy my need for sour cream! Hopefully it will melt soon! If I don't have any sour cream (and I don't think I do), then it's back to the drawing board!

Boy what a couple of days it has been! Yesterday I was glued to the television watching history unfold. I will admit a tissue or two may have been needed from a few tears of joy! This morning I had my yearly physical. I still have to schedule my first mammogram (Yikes! Am I really old enough for that yet??) but the other part went off without a hitch.

Sorry to have deserted you with no explanation, but I got sidetracked. You know how it goes. I'll be posting normally again tomorrow. I'm also hoping to get through any comments that were put in moderation sometime this afternoon, so if you posted something and it hasn't gone through yet, don't worry!

Tonight is Jamison's first class of the semester. We had a pretty big lunch out so Lex and I will most likely have something on the lighter side, like a salad or something along those lines. Tonight we're going to a Halloween block party (or road party as the case may be since we don't live on a block!) so I'm not sure what we're having. It's a covered dish deal. I'm told there will be a hay ride and all sorts of fun! Alexis is beside herself with glee that she gets to wear her purple spider witch costume again and go trick or treating!

First off before we get to dinner stop by Napa Farmhouse 1885 and see my guest blog entry about Thanksgiving memories. I wrote about Thanksgivings of the past and shared my cranberry sauce recipe. Tonight we're doing stir fry type dishes with rice. Jamison will have stir fried beef, Alexis will have chicken and I'm going to make a General Tso's type dish with pre-made sauce (I still haven't found a recipe I like that much for this dish!) and boneless chicken. I'm out of broccoli so I'm going to make some steamed carrots and mushrooms to go with the dish, which Alexis will have some of too.

First up I want to thank everyone that commented and e-mailed get well wishes to me yesterday! I'm feeling some better today. The fever is gone and the haziness, but I'm still a little tired. I'm definitely on the mend!

Now let's talk some dinner for this evening. It's class night for Jamison so I plan on making some sort of baby portabella mushroom soup. I have just enough chicken broth to make Alexis a single serving batch of chicken noodle soup so I'll make that for her while I'm in soup mode.

Oh and if you are the praying sort, my father is scheduled to go in to surgery any minute for his hip. (He may already be there as I type this.) He fell four weeks ago and they just figured out his hip was broken yesterday! They plan on placing two pins in his hip and he should heal quickly. If prayer is not your thing then some positive thoughts would be appreciated too.

Update: 3:53 PM: Just got off the phone with my mom. My dad is out of surgery. They ended up having to do 3 pins instead of 2. He's slowly waking up...The meds are always hard on him. He's talking a bit and seems to be doing well. The first thing he asked for was food! Thanks for all the e-mails! You guys rock! :o)

I'm a little under the weather today. Alexis waking up multiple times a night with nightmares, paired with my fall allergies and a slight fever, is making me generally blah. We're doing ultra simple comfort food tonight in the form of slow cooker lasagna! I'll throw it in at 3 and dinner will be ready around 6.

I was flipping through Taste of Home last night and saw an advertisement that gave me an idea and since Jamison is in class tonight I decided to try it out. It was a picture of a Mexican Enchilada/Taco type of lasagna in the slow cooker and it made my imagination go into overdrive! I put something similar together before we ate lunch and it's on low cooking away downstairs. It might not be quite to Lex's cup of tea so she may end up having red beans, corn and tomatoes instead.

Tonight Alexis has requested homemade pizza so that's what we're going to have.

Jamison will get his standard gluten free crust, sauce, rice cheese, pepperoni and ground beef. Lex will have hers with mozzarella, Parmesan and black olives on a white whole wheat crust. I'm in the mood for something a little more traditional in the pizza department this evening so I'll most likely have black/green olives, red onion, bell pepper, tomatoes and pepperoni also on a white whole wheat crust.

I'll also make a salad for Miss G and me too.

For a while now I've been wanting to try to make lasagna in the slow cooker, but I end up making it the traditional way and then forget to try it out. So when Alexis and Jamison requested lasagna this weekend, and we subsequently got busy and didn't get around to making it because we ran out of time, it made me remember that I wanted to see if my theory would work. I just put the lasagna into the slow cooker on low (it's a gluten/dairy free version, yet with meat...this is Jamison we're talking about after all ;oP) so we'll see how it turns out! It seems to be working perfectly though!

I also put a loaf of gluten free French bread into the bread machine and I can hear it kneading downstairs as I type this. Alexis and I will also have some sort of salad.

Fall is coming! I can just feel it! We're having a lovely, cloudy, windy, cool, very fall like day! Yeah! I'm so happy for Fall! ;oP

Tonight Jamison is cooking, or in other words he's picking up take out! ;oP He's having steak hibachi, Alexis is having edamame and rice and I'm having egg drop soup and something as yet to be decided. I can't find my menu for the place, so I may have to call Jamison and make him read me the parts I might be interested in! ;oP

Boy what a day! It's hard to believe that it's just after one in the afternoon!

Alexis and I spent the morning cleaning, doing lessons, waiting for someone to come take a look at the window in the basement that decided to let water in during Tropical Storm Hanna, and also look at the master bathroom shower, which has decided to send water to the middle floor last night when Alexis was taking a shower upstairs.

How's that for fun??

Plus we still have our science lesson to do after her nap. Busy, busy, busy!

I must admit I'm also sort of melancholy today on this the 7th anniversary of 9/11. Seven years...How is that even possible? The horrors of that day are still so etched in my mind. I remember, as many of you probably do as well, exactly where I was. I remember family and friends calling frantically to make sure we were ok, since one of the passengers on the plane that crashed into the Pentagon shared my maiden name and as pre Miss G I was often known to take the metro into DC to the Smithsonian or the Library of Congress on a whim. In fact Jamison's dad and I were in DC at the Smithsonian a few days before the attack.

I remember watching the news coverage in horror as they showed the planes crashing into the buildings over and over. I remember Jamison coming home from work early and sitting with me as we watched in shock as the story unfolded before us. I remember finding out that a lady we attended church with had just found out that her best friend was on the plane that crashed into the Pentagon. So many memories, all still right there, right on the surface. It doesn't seem possible that seven years have passed!

The past few days I've debated how to explain 9/11 to Alexis. Did I make a lesson out of what happened? Would she understand? Did she need to know at the young age of 5? I finally decided that while she could grasp what had happened, and in her infinitely altruistic way feel for the people who died, and the families who lost loved ones in ways that amaze me every time I see her do just that, I wanted, for just a bit longer, to keep her innocent.

I don't want her to have to worry about what might happen and what did happen and what a horrible that day was. It's been hard enough having to teach her about strangers, and having to make her realize that bad things sometimes happen, and sometimes people even die, in fact we all die at some point, and while we hurt and grieve life inevitably goes on.

I ultimately decided that a tragedy on the scale of 9/11 is not quite on her level yet. Soon enough she will know, and being the truly feeling child that she is, she will hurt for all of those who were directly affected by the tragedy, but for now I want to keep her innocent for as long as I can and keep whatever hurt I can away from her. She is only five after all, though sometimes through her actions and words you forget that fact.

Digressing...Digressing! Oh my have I gotten off of the subject! Let's get back to dinner now shall we and move away from my melancholic thoughts?

My sister invited us over to dinner at her house this evening since Jamison is in class and I'm dealing with repair type issues, but since I have no clue when they may show up (Don't you just love that?? Not!) we had to take a rain check. Alexis and I usually do ultra simple and meat free the nights that Jamison is in class so I think tonight we are going to have grilled cheese sandwiches, which I must say Alexis always refuses to try, but we'll try again because she likes bread and cheese, and there is no reason why she wouldn't like them together. We'll also have some fresh carrots and cucumbers.

Update: 1:59 PM: I forgot that we're out of bread. So no grilled cheese sandwiches here! Back to the drawing board!

Update: 5:52 PM: Alexis ended up having macaroni and cheese (her only really pre-made food that she will willingly eat!) and watermelon. I ended up making a delicious watermelon salad! Look for that recipe next week! ;o)

What's For Dinner?: Labor Day Edition!

This afternoon some friends of ours we haven't seen for a long time are coming over and bringing their son. We plan on relaxing, chatting and letting the kids play. We decided to make a couple of pizzas for dinner: A gluten free meat pizza and a regular veggie pizza. I've got everything shredded/chopped/ready to go in the fridge so when the time comes I'll put the pizzas together. We'll also have a tossed salad and homeade blue cheese or ranch dressing to choose from.

I had planned to make Dorie's Ice Cream Torte yesterday, but I ran out of time. I'm baking a basic chocolate cake (cooling now) and plan to frost it with Caramel Frosting. I made Jamison a gluten free chocolate cake and will frost it the same way.

Tonight we're having guests over for dinner. That's always fun! We're having fajitas (pan made this time I decided it was too hot outside so I pulled out the crock pot instead!), "Refried" Beans, queso, tortilla chips, Fresh "Salsa" and roasted peppers and onions to go on the fajitas. We'll also have cheese and sour cream for topping if desired.

For dessert we're having a peanut butter cheesecake with a chocolate crust (I made Jamison a gluten free version with no crust), topped with hot fudge and freshly whipped cream.

To drink I took some of the concentrate from the Strawberry Lemonade Punch in the freezer and simply made Strawberry Lemonade instead. I also made some Passion Fruit iced tea. I'll have sugar or a zero calorie sweetener for the tea if needed, but I think it's best just straight up and of course we'll have water if either of the above choices don't suit.

Do ever just have one of those days that you're just exhausted before you ever get started? I didn't sleep well last night and subsequently I'm just foggy today. So what does that have to do with dinner? I'm glad you asked! ;oP

Tonight I think a little comfort food is in order, and also food that I don't have to give too much thought to either since my brain is a little foggy! So this morning before Alexis and I headed upstairs to her school room to do lessons I put a roast in the slow cooker. With the roast I'll whip up some mashed potatoes...Plain for Jamison and goat cheese for me. We also have some left over corn from last night for Alexis and me and possibly some sliced cucumbers and/or tomatoes.

The first day of Kindergarten went well! We had a blip here or there, but otherwise it went entirely smoothly and Alexis had fun, so that is all that matters! Now let's talk dinner!

Tonight we're having pork chops, fresh tomatoes and Parmesan and garlic roasted potatoes. For dessert, which we don't normally do that often, but hey it's a special day...Alexis and I will have peach cobbler and for Jamison I will figure out something gluten-free, but I'm not sure what it will be yet.

Update: 7:03PM: I ended up making Jamison some gluten free chocolate pudding. Alexis ended up wanting pudding instead cobbler.

Tonight we're having herb roasted chicken (I like the use the leftovers for other things and I need to make some broth!) and baked potatoes. Alexis and I will also be having some local corn on the cob and some "sushi" pickles.

Update: 4:09 PM: When we got back from Miss G's swim class and I started to get everything ready to put the chicken in the oven I discovered it's still frozen solid! I briefly thought about waffles, but we don't have enough maple syrup. I was trying to think of something else we could have with the original side dishes, but I'm not having much luck with that either. Back to the drawing board!

Update: 4:41 PM: We're going to have left over meat from last night with the same sides as listed above. Who says compromise isn't good? ;oP

Update: 5:51 PM: When I cooked the corn on the cob it turned fluorescent orange! Fluorescent orange? No way that is natural or are we eating it...WTF? I pulled some frozen corn out of the freezer and we are having that instead.

Update: 3:50 PM: After planning out dinner I had a complete change of heart. Jamison wants lasagna so I'm making him a single serving lasagna and one for Alexis too. I'm going to make some Chicken Fajita Nachos for me since I'm not really in a real lasagna mood today. Sometimes you just have to go with the flow! ;o)

Tonight we're having breakfast for dinner. Jamison is having scrambled eggs, bacon and a gluten free roll. I am going to have an omelet or a vegetable scramble (I haven't decided which yet and will decide as I'm cooking) and Alexis wants fruit.

We are having chicken fajitas this evening (minus the tortillas for Jamison). I put the chicken and spices in the slow cooker this morning and I'll make some Mexican rice for me and some plain rice for Alexis and Jamison. I serve the fajitas with roasted onion and peppers, cheese, avocado, beans, a little salsa and sour cream. Jamison eats his plain, possibly with a little cheese and Alexis usually eats the components, but not the whole. The left over chicken is great on salads!

Update: 7:28 PM: I ended up making some "Taco" Rice instead. I'm sure you'll be seeing a recipe for that soon! ;oP

Last night I really regretted heating up the oven for the pizza no matter how delicious it was! It made our upstairs unbearably hot! So tonight we're having another slow cooker night! I put a pot roast into the slow cooker this morning. I'll make some mashed potatoes for Jamison and a cucumber and tomato salad for Alexis and me. We also have a few ears of corn left over from the other night so that will round things out nicely.

Jamison is having left over turkey and some sort of potato. Alexis and I are having pan seared scallops, corn on the cob with thyme (or maybe rosemary or Old Bay...) We also got some lovely local orange tomatoes today so I'll be making a tomato salad as well with fresh basil and thyme out of the garden. I should have tomatoes (among other things) also coming out of my own garden in the next week or so! How exciting is that?

It's hot! I mean really hot! So I decided this morning it was going to be a slow cooker night!

I put a turkey breast into the slow cooker with some black pepper, dried rosemary, sea salt and just a bit of olive oil. I've never made turkey like this before, but it works for chicken so why not? The breast is from a local, natural turkey farm and is big enough to have left overs for sandwiches and other things I want to play around with.

I'll make Jamison some mashed potatoes and pull a gluten free roll for him out of the freezer. I'll makes some mashed sweet potatoes for Alexis and I. I'll also have a side salad and Alexis will most likely have some cucumbers and/or tomatoes along with the rest of her dinner.

Tonight Jamison is having some beef fajitas meat (i.e. the filling for fajitas without the flour tortilla, which he can't eat) and some brown rice. Alexis and I are going to have some rice that incorporates the aspects of vegetable Enchiladas, without all the fat and calories. How about them apples? Alexis also informs me she wants cucumbers and cherry tomatoes...Easy enough!

Update: 3:13 PM: Alexis asked if she could have chicken noodle soup for dinner. I have both some chicken and broth that needs to be used up so I decided she might be on to something. The Enchilada Rice will wait for another day. :o)

Update: 7:50 PM: My sister called on the way home from their CSA and they decided to drop by since Ben had to work late. We had chicken noodle soup and biscuit muffins. Jamison had left over ribs and roasted potatoes. Baby cuddles won out over fajita beef! ;o)

Tonight we are having slow cooker ribs with barbeque sauce and cheese fries. I'm also making a gluten-free yellow cake with milk chocolate frosting. I'll most likely make some vegetable for Alexis and I as well.

Even though it's a gloomy day and I'm currently without a grill the 4th still makes me think of a cook out! So we're having burgers! I'm having a Blue Cheese stuffed Old Bay Burger, Jamison is having a regular burger and Alexis is having some left over chicken. I'm also going to use the machine that Jamison's mom left with me from the Fish Fry and make some seasoned curly fries! Monday my parents were visiting and we had homemade pizza.

Tuesday night my mom and I had chili dogs, Jamison and my Dad had hamburger "steaks" and Alexis had veggies. We also had some tomato slices, tater (I hate that word!) tots and some fresh sweet corn.

Last night we had roasted rosemary lemon chicken and mashed potatoes.

Tonight Jamison is having a steak and some roasted potatoes and I'm going to make a casserole/bake with wild rice, yellow squash and zucchini for Alexis and me along with a salad.

Whew! It's been a long day and it's only past noon! Everything is purchased for the birthday party tomorrow, except for picking up the helium tank in the morning. I've got to whip up some punch, ice/decorate the cake, make some dip, decorate, vacuum, mop (AGAIN!) and various other things I'm sure I'm forgetting. Sorry, but no recipe today! We have a tradition that you get to pick what you want to eat on the day of your birthday. Alexis chose waffles for breakfast, pizza for lunch and drum roll please....

For dinner she has chosen spaghetti! Shocker I know! ;oP I'm going to make a fresh pasta topper with grape tomatoes, asparagus, onions, mushrooms and a little thyme and rosemary for me and regular spaghetti for Alexis and Jamison.

Tomorrow she'll get back on a more healthy, less bad carb laden track, but for today it's her birthday so it's all good! ;o) Saturday is her actual birthday. We're having a Tinkerbell party and her cake will be then! I hope to have pictures of the cake to share. We'll see how the cake ends up and if I can get a good shot with the cameras available. I miss my 20D! :o(

Update: 5:39 PM: While Alexis was playing I spent the past few hours weeding the flower beds. I'm in the mood for anything, but something warm, so I made up a veggie and fruit plate with cucumbers, cherries and blueberries for my dinner instead. Sometimes when you're hot, you just want something light and cold to eat! Jamison and Alexis are still having spaghetti. :o)

For Jamison I'm making a broiled t-bone steak with a no-salt seasoning blend that has everything from garlic to bell pepper to oregano in it, along with some standard mashed potatoes.

For Alexis and me I'm going to broil a salmon steak with a little dill and some asparagus. Alexis is not a fan of any type of mashed potatoes, so she'll sit that side dish out. I think I'll kick mine up a little with some fresh rosemary and some labneh.

We'll also have some wilted spinach for Alexis and me as well. I think I'm also going to try and make Jamison some gluten free rolls too. We'll see how they turn out!

What's for dinner? Good question! I have thin steaks thawed and a pork roast, but neither of them are really calling to me. It's cloudy and there is a line of thunder boomers heading our way, which always makes me wary, so my brain keeps focusing on the weather instead of dinner. And why am I craving cheesecake and what does that have to do with dinner? Absolutely nothing! You see how my mind is working today...I have a pretty good idea of what I'm making tomorrow for Father's Day, but today is just refusing to materialize in my head!

Update: 6/15/2008: 8:53 AM: I ended up taking the thin steak, slicing it into strips and seasoning it with some Old Bay seasoning and tossing it in the skillet with some mushrooms and making a spicy steak sandwich and some oven fries. Not fancy, but quick and delicious!

This evening I'm finally going to experiment with making a General Tso's type chicken dish that is not breaded. I'll make some regular grilled chicken for Alexis and Jamison and we'll all have brown rice and some steamed broccoli for Alexis and me. I also made some homemade mint chocolate "chip" ice cream for dessert. (Look out...We'll be having an ice cream week here on Dianne's Dishes soon! ;oP)

If the GTC turns out well I'm sure you'll see it on the blog soon! This should be fun! ;oP

Update: 8:02 PM: It wasn't quite General Tso's in taste, but it was spicy and a bit sweet and I liked it! I need to play around with the sauce a bit more to make it a true General Tso's type sauce, but what I made tonight really hit the spot if you like a hot/sweet mixture with a kick!

Jamison has an appointment tonight so it's just me and Miss G for dinner and I have no clue what we're going to have yet. Most likely it will be something along the lines of a salad or sandwich, but I just don't know. We might make some soup, since Alexis has asked for it the past couple of days. Alexis loves beans and has been asking for them for a few days. Yesterday afternoon we threw some into a bowl and let them soak overnight. This morning we put them in the slow cooker. Jamison doesn't like beans (or more aptly has most likely never tried them and just says he doesn't like them) so he's getting left over roast beef and a microwave "baked" potato (not as good as an oven baked potato, but it's 100 degrees outside!) We'll also have a salad.

Well it's another steamer outside so it's another slower cooker day in the kitchen! It's currently 90 degrees and depending who you believe we'll either hit 98 or 102. We're going to have steak tips and I'll steam some rice and asparagus right before dinner. I put some steak cut into strips, along with some Vidalia onion and mushrooms in the slow cooker and some seasonings and have it set on low.

Another scorcher today! We went over the 100 degree mark yesterday and today is shaping up much the same. Again in the theme of not heating up the house we're having a slow cooker meal. (You'll probably see another slow cooker meal tomorrow too since it's going to be hot as Hades then as well! This summer may just become the summer of the slow cooker!) I put some potatoes and a roast in with some salt and pepper. We'll have pot roast, potatoes and a side salad with Ranch dressing.

Update: 5:26 pm: I forgot to say we're having corn on the cob too! It's one of Alexis' all time favorites. I just pulled the pot roast out of the slow cooker to rest for a few minutes and it looks perfect!

As I mentioned yesterday we're having some friends over for an early dinner and a play date. As I also mentioned yesterday we went from pre-spring to Hades in about a week, so I wanted something that didn't involve firing up the oven! So I decided to make some crock-pot pulled pork on whole grain buns with barbeque sauce and slaw, some potato salad, a veggie tray for snacking with some Ranch dressing and a no-bake key lime cheese cake for dessert.

Yikes it's hot! This afternoon and for the next few days we're under an extreme heat advisory. Two weeks ago we were in the 50's and now we're supposed to hit 98 tomorrow! Dear lord! So in sticking with the I'm not going to heat up the oven anymore than I have to theme we're going to have turkey club sandwiches and some sliced veggies.

Tomorrow we're having some friends over for an early dinner. I'm still trying to figure out what to do for then too given it's supposed to be so hot...

So I'm feeling blah today. Do you ever have one of those days where you just feel eh? It's cloudy and dreary and I'm sure that's not helping matters. So what does this have to do with anything? Who knows. Welcome to my world people...It's that kind of day! ;oP

On the dinner front I'm drawing a blank. I was going to make a slimmed down version of General Tso's Chicken that wasn't breaded or fried, BUT I don't have any broccoli on hand and really you need steamed broccoli to make General Tso's Chicken come together. I have a bag of frozen broccoli, but it's just no the same for this dish.

So since I have chicken ready to go I guess I'll come up with something to utilize that...What? I'm not sure yet, but something chickeny is in order I suppose...Or maybe not. Now you see what I'm saying! ;oP

I've been trying to not fire up the oven as much as possible since it has gotten warm outside, but I really want to make stuffed pork chops for dinner and they have to be baked, so I'm going to compromise. I'll make a stuffed pork chop for me and plain pork chops for Alexis and Jamison and I'll bake them in the toaster oven. It's a great way to bake in the summer and it doesn't put out as much heat! We also are going to have some steamed whole grain wild rice and dill carrots.

It's going to be a warm one today so I don't want to heat up the oven and thus the house. I've missed my window for anything slow cooker related, so that's out. We have a few left overs so we may just make it a left over night. I might have another salad since I have steak and blue cheese dressing left over, or we may get take out...Hibachi for Jamison, sushi for me and rice and edamame for Alexis, but I need to balance the checkbook first.

I have no clue what we're having for dinner tonight. I can't even decide what I want to eat for lunch! It's like my brain is on permanent freeze today. Do you ever have days like that? I'm sure I'll figure it out...Maybe! ;o)

Update: 12:57 PM: It didn't take me long to figure out what to do for dinner! I'm going to make version two of Gluten Free Cheeseburger Macaroni for Jamison. He didn't like the first version that I made with real cheese (you see what I'm dealing with here? ;oP) so I got some gluten free dried cheese powder to play around with instead. I'll make some sort of salad and/or vegetable for Alexis and I as well. We'll see what develops. We may just be eating sandwiches instead! ;o)

Update: 3:08 PM: I still plan on making the GFCM for Jamison, but I've decided I just want a steakhouse salad. Spinach, some cucumber, tomato, boiled egg, carrot, sunflower seeds, a little steak and some homemade Thousand Island dressing. I just can't make up my mind today! Hopefully this will stick as I'm boiling eggs right now! ;oP

Update: 3:25 PM: Just discovered I have no pickle relish to make Thousand Island so make that homemade blue cheese dressing instead!

One day last week I saw a demo video on how to butterfly a chicken and I've been wanting to try it ever since. So the plan is to butterfly the chicken and then split it into two halves. I'll season one half with Old Bay and then season the other with thyme and rosemary for a bit of choice. Too bad we can't grill the sections because that would be superb! Anyway, I'll pair it with some roasted asparagus, corn on the cob and a spinach salad.

It's Memorial Day! The first unofficial day of summer and the temperatures are actually going to climb in to the high 80's to prove it! What better time to pull out some picnic food and have a little get together?

My sister and her husband are coming over with Nelson and Grant (baby toes!) and we're going to have a nice afternoon of fun. We're going to have some pulled pork with some barbeque sauce, potato salad, baked beans, slaw, corn on the cob, some spinach artichoke dip for snacking and my completed Daring Bakers challenge, which will be revealed on Wednesday.

Today we're planning on spending the majority of the day outside working on the garden and the yard. I'm not sure what we'll do for dinner, but most likely something quick and simple and more likely that not I won't make dinner, but we'll pick up some hibachi for Jamison and some sushi for me after a day of hard work. Alexis usually likes to get edamame and rice, but sometimes she gets a cucumber roll, so we'll judge what she wants when the time comes.

P.S.I'm hoping to post a garden update this evening and hopefully it will show the garden completely tilled and plants planted, though we do have all weekend and the weather is supposed to be good so stay tuned! ;o)

Update: 3:54 PM: Catching up with the mowing, which had to be done before the tilling, has proved to be an all day task due to the volume of grass that has been fed by almost non-stop rain the past week or so. I've mowed on and off, but Jamison has done the brunt of the work so I will most likely cook dinner. I'm thinking of making steak sandwiches (on gluten free bread for Jamison) and oven fries...For now the garden update is also on hold. We'll get back to that tomorrow. We're tired, but it's been a productive day.

Tonight we're having homemade pizza. Alexis and I will have a white whole wheat crust and Jamison will have his pizza on Gillian's GF dough. (I haven't gotten around to experimenting with my own GF pizza dough yet, but Gillian's is really good! It's not the same consistency that you would expect pizza dough to be, but it bakes up nicely and it has a mild flavor that doesn't overpower the rest of the pizza.)

I can't decide if I want to do something like this or something a bit more traditional with sauce and a little bit of everything. I guess I'll decide that as I'm making the pizza. Alexis normally eats cheese and black olives, though lately she's asked for just cheese. Jamison likes ground beef, pepperoni and rice mozzarella. (We buy the block and shred it ourselves because it melts better.) Alexis and I both put regular fresh mozzarella and Parmesan on our pizzas and she loves to help me put them together.

We went out and about, had a walk and had some fun and in the process lost track of time. Jamison ended up working late so Alexis and I grabbed a bite to eat while we were out. Spinach and Fruit Salad

Spinach and Fruit Salad

This is an oldie, but a goodie. With all the strawberries coming in in the garden it gives me the chance to make a lot of old strawberry favorites! My sister actually gave me a recipe similar to this when I was pregnant with Alexis and I craved it! Not surprisingly you're looking at 4 of Alexis' favorite foods now right there in the bowl (spinach, strawberries, blueberries and almonds...throw in some chicken, tomatoes and mozzarella here and there and the kid is in heaven! In fact in her mind she could survive on those alone, but that's neither here nor there.)

The original recipe called for champagne vinegar (which I couldn't find/wasn't sure about using when I was pregnant anyway) and just strawberries paired with the spinach and almonds, but over the years I've tweaked it. Sometimes I use sugar in the vinaigrette, which the recipe called for and sometimes (and most of the time in fact) I use honey instead. I've tossed in cashews instead of almonds or used both of them at once. I've even used walnuts and paired it with apples and blue cheese. Feta works as well and any kind of fruit that strikes your fancy would be good, though I usually stick to just strawberries and/or blueberries and/or oranges.

Regardless of how you toss it (yeah I just went there! ;o)) this salad is the perfect meal for a summer time dinner or even lunch! It's also another one of those that is easy and fun to play around with, making numerous yummy variations as you go!

What You'll Need Per Person:
2 cups of baby spinach, washed and drained (Note: Even if the bag says it's triple washed or whatever WASH it! You don't know who has touched it or what conditions it has gone through despite of their claims. Unless you saw it washed with your own eyes don't take the chance!)
1 cup of strawberries, sliced
1/2 cup of blueberries
1/3 cup of almonds (whole, slivers, slices, whatever you like)
1 tablespoons of extra virgin olive oil
2 tablespoon of vinegar (I prefer apple cider vinegar, but you can use whatever vinegar you like)
1 tablespoon of organic cane sugar or honey

Toss together spinach, strawberries, blueberries and almonds until incorporated. Mix olive oil, vinegar and sugar or honey to make a dressing. Drizzle over salad and toss to combine. Serve immediately.

Notes: Due to the vinegar in the vinaigrette this salad wilts if stored so don't make it too far in advance and realize that leftovers won't store well and will end up a big wilted mess. I usually make it no more than 30 minutes in advance. Also I prefer more vinegar to oil, but if you prefer more oil equal the ratios or switch them around. It's all according to personal taste.

Update: 8:08 PM: In my grand spring cleaning of the fridge and pantry I didn't realize that I was out of Boca Burgers so I actually ate a REAL burger for the first time in a while. (So far my stomach hasn't rebelled...fingers crossed!) I ended up making a Stuffed Mushroom and Cheddar Burger with Cajun Oven Fries that was delicious! The recipe will come tomorrow.

Update: 4:51 PM: Make that pancakes instead! Alexis has her heart set on pancakes and not waffles. I tried to convince her that there's really not that much difference, but she wasn't convinced! I still may throw in a few blueberries into mine though! ;o)

I can't decide between Creamy Tomato Basil Soup or Vegetarian Matzo Ball soup. It's snowing and I'm making some semolina bread (more about that later...it's rising as I type this!) and I know I want soup, but I can't decide which one!

Update: 7:30 PM: After spending time outside playing in the snow with Jamison and Alexis (a snowman and a snowball fight!) I decided to make the Creamy Tomato Basil Soup and grilled cheese sandwiches. The semolina bread turned out great and made a wonderful mid afternoon snack! I'll post the recipe later this evening or in the morning!

What's For Dinner?

We're having some friends over for dinner tonight and decided to do Mexican! We're having fajitas (chicken, beef and portabella mushroom, so that there's a mix for everyone) with peppers and onions. (I'll take pictures and post this recipe the next time I make it...I have a feeling we'll be having too much fun for me to remember to take pictures of the fajitas this evening!) Refried beans (recipe to come), Mexican rice (recipe to come), guacamole, salsa cheese dip (recipe to come), fresh salsa (i.e. a kicked up pico de gallo...recipe to come) and they are bringing homemade apple pie for dessert. I made some vanilla ice cream this morning to go along with that. We'll have a few margaritas and/or some sangria and it should be a most lovely evening!

Update: 2: 50 PM: We have to run some errands so we'll eat dinner out. I'm not sure where, but at least we now have a general idea. :o) I'm leaning toward somewhere I can get some soup or a salad. We'll see where we end up later.

Update: 3:57 PM: Back to the drawing board. Errands will be run in the morning so I don't know what we are going to do for dinner again.

Update: 6:36 PM: I ended up having an avocado sandwich with cheddar and pea sprouts, pita chips and salsa. Not thrilling, but good none the less.

We're having some friends over for dinner tonight and are having Lasagna (1 veggie and 1 with meat), a salad with a choice of either homemade Ranch dressing or homemade Thousand Island dressing (recipe to come), garlic bread and chocolate cheesecake with fresh whipped cream, blueberries and strawberries for dessert! What's For Dinner?

Today when Alexis and I went to the grocery store I actually threw together a salad bar salad for this evening. It has spinach (I prefer spinach to lettuce), red onion, celery, chick peas, red beans, carrots, a little red cabbage, cucumber, tomatoes and bell pepper. I rarely do that, but everything is already cut and it makes it so nice! Jamison has a meeting tonight (unless it gets canceled due to snow) and he won't be eating dinner with us. I'm thinking about making a creamy tomato soup as well, but we'll see how the afternoon goes.
